Homemade Caramels & Wassail with KitchenAid

The Best (and easiest) Homemade Wassail - Headed Somewhere + KitchenAidThe Holidays just aren’t the Holidays without our favorite family recipes. These are made every year without fail. The best part, is they are both pretty easy and only 5 ingredients each. SWEET!

The wassail, we usually make on Christmas day in the morning, let it simmer on the stove, and our house smells AMAZING for the entire day. The caramels are the easiest go-to recipe for neighbor gifts, party favors. (I usually make a ton to have on hand for desserts and parties as well!)

I’ve teamed up with KitchenAid because I am LOVE with these pots and pans. Seriously, they’re awesome. I have never made caramels and not had them stick to the bottom while cooking. Even in our family recipe it says, (DO NOT SCRAPE THE BOTTOM OF THE PAN) because all the nasty burnt caramel will get into the soft stuff and its just gross. I’ve done it too many times to count and had to start over/give up. HA! So this was the true test. And guess what… NO STICKING. No scrubbing either. Look through the pics and you see the one where the caramel is just FALLING out of the pot? HA!! amazing. Am I a dork for thinking this is awesome? Maybe… but maybe you should think it’s awesome too. 🙂

Wassail Recipe:

Okay so the wassail recipe is a “no-fail”… which means you cannot mess it up. There are a trillion different wassail recipes out there, but this is ours and I think its the best. 🙂

Ingredients:

1 gallon apple cider

12-15 whole cloves

1/2 cup brown sugar

3 whole cinnamon sticks

6 oz. can orange juice concentrate

Bring all ingredients to a boil (except for the OJ concentrate) and steam for an hour to two. Best when you do this the day before and let it sit in the fridge overnight. Heat before serving and add the orange juice concentrate. Steam for about 30 minutes or until read to serve.The Best (and easiest) Homemade Wassail - Headed Somewhere + KitchenAid

Caramel Recipe:

These are addicting to BEWARE. ha! They are soooo yummy and always a hit. But take a bit of time in the refrigerator to harden… so give yourself time!

Ingredients:

1.5 cups butter

1.5 cups karo syrup

1.5 cups sugar

1.5 cups brown sugar

1 can Eagle Brand sweetened condensed milk

Bring all ingredients to a medium boil. Boil until mixture form a soft ball when dropped into cold water (this is called the soft ball stage – see photo). Do not scrape the bottom of the pot… although, if you have the KitchenAid pots… I found this is a non-issue! Pour into a 9×13 pan. Refrigerate for a couple of hours or until firm enough to roll. Cut and wrap!

    Hiya lady! I am in love with your pots and pans. I know they are kitchenaid but I was wondering what color you have? They look like a gorgeous rose gold but I can only find copper ones on the website. Thank you!

      Hello! They are the Toffee Delight color! I am not sure that they still carry them on the site, but you can google and I know other places carry them.
